Papa Sweets NC

Charlotte, NC. Order ahead.

Why I bake

I started Papa Sweets because I loved the bean pies my grandfather made for me. He is a culinary chef, a former military man, and the reason I bake. I'm not trying to reinvent dessert; I'm just sharing what I love.

What that looks like in the kitchen: an all butter crust rolled and shaped by hand, fillings cooked and thickened on the stove so they set instead of running, crumble weighed by batch. Small runs, no preservatives, never frozen, and an honest shelf life we tell you up front.

The process

Three steps that decide the pie

The shell

The shell

All butter dough, rested cold and shaped by hand. The fat stays in sheets, so the crust flakes instead of crumbling.

The filling

The filling

Fruit diced by hand and cooked down with sugar and spice until the liquid thickens. Set filling, no soggy base.

The fill

The fill

Poured and topped to weight, so every pie in the batch bakes evenly and finishes at the same time.
